Instructions

  1. Add red lentils, oats, garlic, ginger, and green chili into a blender. Start by adding 1.5 cups of water and blend. Check the texture and gradually add more water if needed. The batter should be thick, slightly coarse, and pourable — but not too runny or flowy. A thicker batter helps the pancakes hold shape and cook properly.
  2. Transfer the batter into a bowl. Add chopped dill, salt, turmeric, and cumin-coriander powder. Mix well.
  3. Let the batter rest for about 10 minutes while you prepare the dip. This allows the oats to absorb liquid and improves texture.
  4. Mix yogurt, dill, hemp hearts, and black salt in a bowl until creamy and well combined. Set aside.
  5. Heat a lightly greased pan over medium heat. Spoon small portions of batter to form mini pancakes. Cook 2–3 at a time depending on pan size. Drizzle olive oil if needed. Cover and cook for 3–4 minutes per side, until golden brown and cooked through.
  6. Serve warm pancakes with the yogurt, dill, and hemp heart dip. Garnish with extra dill if desired.

💡 Chef’s Notes

For best results, ensure the batter is thick and slightly coarse, not too runny, as this helps the pancakes hold their shape and cook properly. Resting the batter for 10 minutes allows the oats to absorb liquid, improving the texture and binding. Cook the pancakes on medium heat, covered, for even cooking without drying them out. While soaking lentils is optional and can improve digestibility for some, it’s not required for this recipe due to the quick-cooking nature of red lentils, blending, thorough cooking, and the aid of spices like ginger and cumin. These pancakes are best served fresh off the pan. Leftovers can be refrigerated for up to 3 days and reheated in a pan or air fryer. They can also be frozen for up to 2 months, ideally without the dip.
