A quick, no-bake coconut treat made with almond flour, shredded coconut, and a rich dark chocolate coating. Naturally rich in healthy fats and fiber with no added sugar in the base, these bites deliver a deeply satisfying, fudge-like texture balanced by a dark chocolate finish. This recipe yields 6 dense bites, but the mixture can also be rolled into 12 smaller truffles for portion control. Store the finished bites in an airtight container in the freezer for up to 1 month or in the fridge for up to a week.

Instructions

  1. In a large bowl, combine the shredded coconut, coconut milk powder, almond flour, and coconut milk. Stir thoroughly until a cohesive dough forms.
  2. Divide the mixture and add it to a mold to form 6 equal-sized bites.
  3. Freeze the bites for about 2 hours, or until firm.
  4. In a heat-safe bowl, melt the dark chocolate together with the coconut oil using a double boiler or 30-second bursts in the microwave, stirring in between.
  5. Remove the frozen bites from the freezer and dip each one into the melted dark chocolate until evenly coated. Return them to parchment paper.
  6. Optional: Melt the white chocolate with ¼ tsp coconut oil. Drizzle over the dark chocolate layer or create a custom dot-and-swirl pattern.
  7. Allow the chocolate coating to set completely before serving. Store the bites in the refrigerator or freezer.

💡 Chef’s Notes

Freeze time is 2 hours. For portion control, roll the mixture into 12 smaller truffles instead of 6 large bites, which halves the calories per serving to approximately 210 kcal. To boost protein content, swap ½ cup of the coconut milk powder or almond flour with your favorite unflavored or vanilla protein powder (such as pea, soy, or whey isolate).
