High Protein Tofu Spinach Pockets | Easy Vegetarian Wraps

These easy tofu and spinach pockets are a quick, protein-rich vegetarian meal made with grated extra-firm tofu, spinach and your choice of spices. The recipe suggests Karahi Masala, but you can easily substitute cumin, coriander, garam masala, or your favourite spice blend. The filling is wrapped in whole-wheat tortillas and served with a creamy Greek yogurt and hemp heart dip.

Instructions

  1. Grate the extra-firm tofu. In a pan, sauté the grated tofu in 1 tbsp olive oil for about 2 minutes.
  2. Add turmeric, 1/2 tsp salt, your choice of spices, and tomato paste to the pan. Cook for 3-4 minutes.
  3. Add chopped spinach to the pan and cook until tender.
  4. Finish the tofu and spinach filling with fresh lemon or lime juice (using half of the lemon/lime).
  5. In a separate bowl, mix plain Greek yogurt with hemp hearts, 1 tbsp olive oil, 1-2 tsp lemon juice (from the remaining half lemon/lime), freshly crushed black pepper, and salt to taste. Add 1-2 tbsp water as needed to achieve a creamy consistency.
  6. Fill the whole-wheat tortillas with the prepared tofu and spinach filling. Fold them into pockets.
  7. Warm the assembled pockets before cutting and serving with the creamy Greek yogurt and hemp dip.
