This simple, nourishing warm salad is a perfect break from heavy winter meals. It features tender asparagus, boiled potatoes, fresh veggies, and a lightly sweet honey-lemon seed dressing. Ideal as a light meal, side dish, or when you crave something warm but not heavy. It’s made with easy ingredients, quick to cook, and very comforting.

Instructions

  1. Wash asparagus, trim the ends, slit thick stalks, and cut into 1-inch pieces.
  2. Peel and dice one boiled potato into small cubes.
  3. Dry roast sesame, flax, and pumpkin seeds (1 tbsp each) in a pan. Keep aside.
  4. In the same pan, sauté asparagus with a little olive oil and salt until just tender.
  5. In a bowl, combine the sliced onion, cherry tomatoes, carrot, diced potatoes, and sautéed asparagus.
  6. Blend the roasted seeds with olive oil, honey, lemon juice, salt, and a little water if needed, to create the dressing.
  7. Pour the dressing over the salad and mix well to combine all ingredients.
  8. Top with extra pumpkin seeds or nuts of your choice. Serve warm.
