A simple blend of quinoa, bananas, yogurt, and seeds turns into a nourishing loaf that’s perfect for breakfast or snacking.
Instructions
- Rinse 1 cup quinoa well, then cook with 1.5 cups water. Simmer until water is absorbed.
- Let the cooked quinoa rest covered for 5 minutes, then fluff with a fork. Cool slightly.
- In a blender or food processor, add the cooled cooked quinoa, bananas, yogurt, oil, egg, chia seeds, flaxseed, and salt. Blend until smooth.
- If using baking soda, mix it in now with a squeeze of lemon juice for a fluffier bread.
- Pour the batter into a lined loaf pan. Bake in a preheated oven at 350°F (175°C) until the center is set and a toothpick comes out clean.
- Let the loaf cool completely before slicing.
