This Cheesy Avocado Egg Tortilla Wrap combines a fluffy omelet, gooey cheese, creamy avocado, and a hint of ketchup, all folded into a crispy triangle tortilla.
Instructions
- In a bowl, whisk eggs, onion, tomato, cilantro, salt, and pepper.
- Heat a pan with 1 tbsp olive oil or butter, pour in the egg mixture, and cook for 1 minute.
- Place the tortilla on top of the half-cooked omelet. Cook for another 1–2 minutes, then flip so the tortilla faces the bottom.
- Add cheese slice in one quarter, then layer with avocado slices and drizzle some ketchup.
- Fold the tortilla starting from the cut portion into a triangle wrap (fold clockwise 3 times).
- Flip and cook both sides until crispy and golden.
