This Creamy Corn Soup is naturally thick and comforting, made with cashews instead of cream.

Instructions

  1. Heat olive oil in a cast iron pan.
  2. Add chopped garlic and sauté for about 1 minute until fragrant.
  3. Add rinsed sweet corn and sauté for 2–3 minutes.
  4. Remove about ⅔ of the corn and blend it with cashews and ½ cup water until smooth.
  5. Add the blended mixture back to the pan with the remaining corn.
  6. Cook for 2 minutes, then add water or broth as needed.
  7. Bring to a gentle boil.
  8. Finish with fresh lemon juice and garnish with basil.
  9. Serve warm and enjoy.
