Instructions
- Crack 3 eggs into a bowl. Add chopped tomato, cilantro, salt, and chili flakes. Mix well and set aside.
- Slice 1 medium red onion thin using a mandoline slicer. Spread the onion slices evenly in a nonstick pan and drizzle 1 tbsp oil on top.
- Pour the egg mixture evenly over the onions.
- Cook on medium heat until bubbly and the top starts to set.
- Cover with a plate, flip carefully, and slide it back into the pan to cook the other side.
