Episode 8 of my soup series! Today we are making a creamy, chunky, and protein-packed Red Lentil & Broccoli Soup that’s ready in under 20 minutes. Perfect for a quick lunch!

Instructions

  1. Sauté onion, garlic, and lentils in a cast-iron pan.
  2. Add spices (cumin-coriander powder, salt, turmeric) and water to the pan; simmer until the lentils are cooked.
  3. Meanwhile, blanch the broccoli and tomato, then mash them chunky.
  4. Stir the mashed broccoli and tomato into the lentils, boil for 1 minute, and serve with fresh lemon and coriander.
