Crispy Cheesy Zucchini Cabbage Fritters

If you’ve got zucchini and cabbage lying around, don’t waste them! Turn them into these crispy, cheesy fritters. So easy to make, ready in minutes, and perfect for a quick snack or even breakfast.
Instructions
- In a bowl, mix together the grated zucchini, chopped cabbage, egg, oats (or oats flour), turmeric, onion powder, garlic powder, paprika, and salt until well combined.
- If using whole oats, let the mixture rest for 5 minutes. If using oats flour, you can skip this resting step.
- Heat 1 tbsp of oil in a pan over medium heat. Add spoonfuls of the mixture, shaping them into small fritters.
- Cover the pan and cook for 2-3 minutes. Make a small hole in the center of each fritter to help them cook evenly.
- Flip the fritters, add cheese and chili flakes on top, then cover again and cook until the cheese is melty and the fritters are golden brown.
- Serve hot and enjoy immediately!
💡 Chef’s Notes
The recipe is quick to make, often referred to as a ‘5-minute recipe’ due to its minimal active time. If using oats flour instead of whole oats, you can skip the 5-minute resting period after mixing.
