Indulge in this warm, comforting, flavour-packed Shredded Oyster Mushroom Stir Fry. It’s super quick, needs only a handful of ingredients, and transforms plain oyster mushrooms into something crispy, savoury, and addictive. I love enjoying it with bread, but it goes perfectly with rice, noodles, wraps, or flatbreads.
Instructions
- Shred the oyster mushrooms using a fork into thin strips.
- Heat 1 tbsp oil on medium-high heat in a pan. Add the shredded mushrooms and sauté for 2–3 minutes.
- Garnish with fresh spring onions and serve warm.
- In a small bowl, mix all the sauce ingredients: soy sauce, hot sauce, ketchup (optional), vinegar or lime juice, sesame seeds, chili flakes, and water.
- Add the sliced onions and salt to the pan. Continue to cook until the moisture dries up and the mushrooms turn slightly crisp at the edges.
- Pour the prepared sauce into the pan with the mushrooms and onions.
- Toss everything well until the mushrooms and onions are evenly coated and glossy.
