Instructions
- Prepare the ingredients: wash the red lentils (or soak for 20 minutes if preferred), grate the small zucchini, and chop the tomato, garlic cloves, and small piece of ginger.
- In one pan, combine the prepared red lentils, grated zucchini, chopped tomato, garlic cloves, ginger, olive oil, cumin seeds, salt (start with Β½ tsp if desired), turmeric, and water.
- Bring the mixture to a simmer and cook for 7-8 minutes, or until the lentils are tender and the soup has reached your desired consistency.
