This Air-Fried Chickpea Quinoa Salad is a crunchy, colorful, and flavor-packed meal featuring crispy marinated chickpeas, fresh bell peppers, fluffy quinoa, and a zesty homemade dressing. Perfect for lunch, dinner, or meal prep, it’s a vegetarian, protein-rich, and gluten-free option.
Instructions
- In a bowl, mix chickpeas with yogurt, chili powder, garlic powder, onion powder, and salt. Coat well.
- Air fry the marinated chickpeas at 200Β°C (390Β°F) for 10 minutes, shaking halfway through.
- In a separate bowl, combine cooked quinoa, chopped bell peppers, and chopped fresh dill.
- In a small jar, add all dressing ingredients: olive oil, minced garlic, salt, black pepper, Italian seasoning, honey, and lemon juice. Shake well until thoroughly combined.
- Pour the prepared dressing over the quinoa mix and toss well to combine. Top the salad with the crispy air-fried chickpeas. Drizzle extra dressing and lemon juice if desired.
