Easy Lentil Spinach Soup

This bowl is warm, nourishing and perfect when you want something quick, healthy and comforting. Made with red lentils, fresh spinach, garlic and simple spices — this soup comes together in under 20 minutes.
Instructions
- Heat olive oil and butter in a pot. Add minced garlic and sauté until fragrant.
- Add chili flakes, then add the rinsed lentils. Sauté for 1–2 minutes.
- Add chopped tomato, salt, turmeric, and cumin–coriander powder. Mix well.
- Pour in 1 cup of water. Cover and cook for 12–15 minutes, or until lentils are tender.
- Slightly mash the lentils with a spoon or potato masher for a creamy texture with some chunks remaining.
- Add the chopped spinach and cook for 2 minutes, until wilted.
- Adjust water if needed to reach your desired soup consistency.
- Serve warm.
