No-Flip Spinach Cheese Omelet

Today I’m sharing my delicious No-Flip Spinach Cheese Omelet — inspired by the Italian frittata and French quiche, but made the QuickFix way: fast, easy, and full of flavor! Loaded with fresh spinach, tomatoes, onions, and cheesy goodness, this omelet is perfect for: A busy morning breakfast, A light, healthy lunch, Or a no-fuss dinner idea!
Instructions
- Chop the fresh spinach, tomato, and onion. Whisk the eggs in a bowl.
- Combine the chopped veggies with the whisked eggs. Mix in half of the grated cheese, and season with salt and pepper to taste.
- Lightly oil a pan with 2 tsp of oil and place it on low heat.
- Pour the egg mixture into the lightly oiled pan.
- Sprinkle the remaining half of the grated cheese on top of the omelet mixture in the pan.
- Cover the pan and cook for 8 minutes until the omelet is set.
- Slice and serve immediately.

No flipping, no crust, just stir, pour, cover, and cook.
