Today I’m sharing my delicious No-Flip Spinach Cheese Omelet — inspired by the Italian frittata and French quiche, but made the QuickFix way: fast, easy, and full of flavor! Loaded with fresh spinach, tomatoes, onions, and cheesy goodness, this omelet is perfect for: A busy morning breakfast, A light, healthy lunch, Or a no-fuss dinner idea!

Instructions

  1. Chop the fresh spinach, tomato, and onion. Whisk the eggs in a bowl.
  2. Combine the chopped veggies with the whisked eggs. Mix in half of the grated cheese, and season with salt and pepper to taste.
  3. Lightly oil a pan with 2 tsp of oil and place it on low heat.
  4. Pour the egg mixture into the lightly oiled pan.
  5. Sprinkle the remaining half of the grated cheese on top of the omelet mixture in the pan.
  6. Cover the pan and cook for 8 minutes until the omelet is set.
  7. Slice and serve immediately.

💡 Chef’s Notes

No flipping, no crust, just stir, pour, cover, and cook.
