This bowl is warm, nourishing and perfect when you want something quick, healthy and comforting. Made with red lentils, fresh spinach, garlic and simple spices — this soup comes together in under 20 minutes.

Instructions

  1. Heat olive oil and butter in a pot. Add minced garlic and sauté until fragrant.
  2. Add chili flakes, then add rinsed lentils. Sauté for 1–2 minutes.
  3. Add chopped tomato, salt, turmeric, and cumin-coriander powder. Mix well.
  4. Pour in 1 cup water. Cover and cook for 12–15 minutes.
  5. Slightly mash the lentils for a creamy texture with little chunks.
  6. Add chopped spinach and cook for 2 minutes.
  7. Adjust water if needed to reach desired soup consistency.
  8. Serve warm.
