This Flax Plantain Flatbread is crispy, satisfying, and made with simple plant-based ingredients. Grated green plantains are combined with ground flaxseed, chickpea flour, and spices to create a naturally vegan, gluten-free flatbread that cooks beautifully in a pan. Finished with a short burst of high heat, this flatbread develops an irresistible crunch while staying wholesome and nourishing.

Instructions

  1. Peel and grate the green plantains.
  2. Add flaxseed, chickpea flour, rice flour, salt, garlic powder, onion powder, and chili flakes to the grated plantains.
  3. Add water slowly and mix to form a thick, smooth batter — ensure it's not runny.
  4. Heat 1 tbsp olive oil in a pan on medium–low heat.
  5. Add batter to the pan and shape into a round flatbread using a spoon or your hands.
  6. Sprinkle black sesame seeds on top (optional).
  7. Cook for 3–4 minutes per side on medium–low heat.
  8. Flip once or twice if needed during cooking.
  9. Finish with 1 minute on high heat for extra crispiness.
  10. Serve hot and enjoy.
