Instructions

  1. Whisk eggs, chopped onion, chopped tomato, cilantro, salt, and pepper together in a bowl.
  2. Heat olive oil or butter in a pan. Pour the egg mixture and cook for 1 minute. Then, place the whole wheat tortilla on top of the cooking egg mixture. Flip the tortilla and egg.
  3. Add the cheese slice, sliced avocado, and tomato ketchup in one quarter of the tortilla.
  4. Fold the tortilla into a crispy triangle wrap, starting from the quarter with fillings, folding it over the next quarter, then over the third, and finally over the fourth to form a triangle.
