These cheesy zucchini onion fritters are crispy on the outside and have a gooey cheese center for the perfect snack or light meal. Super quick, healthy, and made with simple ingredients – you’ll want to make them again and again!
Instructions
- Grate zucchini and squeeze out excess water.
- Thinly slice onion and mix with zucchini, egg, Italian seasoning, garlic powder, salt, pepper, chickpea flour, and corn starch.
- Heat a pan and spread 3 tbsp batter in a round shape.
- Place a slice of cheese on top, then cover with more batter.
- Cook for 2–3 minutes per side until golden and crispy.
- Serve hot and enjoy the cheesy surprise!
