These healthy and flavorful Sweet Potato Falafel-Style Bites can be cooked two ways: in the pan or in the air fryer. These cutlets are a delicious fusion twist made with grated sweet potatoes, cornmeal, dill, and onions, offering a crisp exterior and a soft interior. They are served with a refreshing yogurt cucumber dip, are easy to prep, require no deep frying, use simple pantry ingredients, and are packed with fiber, antioxidants, and flavor.
Instructions
- Peel and grate sweet potatoes.
- Boil grated sweet potatoes for 5 minutes in water with a few drops of oil.
- Strain well and mash with a fork.
- Add mashed sweet potatoes to a mixing bowl. Add chopped dill, chopped onions (optional), and all spices (turmeric powder, red chili powder, garlic powder, onion powder, salt).
- Mix in cornmeal and cornflour. Use hands to combine well into a dough-like mixture.
- Shape the mixture into small patties (makes around 11).
- For Pan Frying: Heat a little oil in a pan. Shallow fry 5 patties, flipping 3 times until golden and crispy.
- For Air Frying: Place 6 patties in an air fryer. Cook at 200°C (392°F) for 10 minutes.
- Serve warm with a cucumber-yogurt dip.
