Cozy Zucchini Lentil Soup

Warm up with this cozy and nourishing Zucchini Lentil Soup! Packed with protein and flavour, this soup is perfect for a quick lunch or a light dinner. Vegan, healthy, and so easy to make!
Instructions
- Soak 1/2 cup of red lentils for 10 minutes.
- Heat 1 tbsp olive oil in a pan over medium heat.
- Serve warm and enjoy your cozy Zucchini Lentil Soup!
- Chop the onion, mince the garlic cloves, and dice the zucchini.
- Add the chopped onion and minced garlic to the pan and sautΓ© until fragrant, about 3-5 minutes.
- Add the diced zucchini, 1/2 tsp turmeric, salt, and pepper to taste. SautΓ© for a few more minutes.
- Stir in the soaked red lentils and 4 cups of vegetable broth.
- Bring the soup to a simmer, then reduce heat and cook until the lentils and vegetables are soft, approximately 20-25 minutes.
