A perfect high-protein stir fry packed with flavor, crunch, and color!

Instructions

  1. Prep all veggies and tofu before starting.
  2. Heat olive oil in a large non-stick pan or wok on medium-high flame.
  3. Add cumin, green chili (optional for heat).
  4. Sauté onions till slightly soft.
  5. Add ginger and garlic, sauté for another 30 seconds until fragrant.
  6. Toss green beans and stir fry for 2-3 mins to avoid rawness.
  7. Add tofu cubes and all other veggies and cook until golden brown on all sides.
  8. Add soy sauce, ketchup and lemon juice or vinegar.
  9. Add little water to make more saucy.
  10. Cook for 1–2 minutes more until everything is well-coated.
  11. Garnish with spring onions and serve hot!
