A quick, easy & healthy twist on chickpeas – fresh dill adds a unique flavor to this protein-packed curry. Ready in minutes and perfect with rice, roti, or even salads!
Instructions
- Heat oil in a pan, then add cumin seeds and chopped onion. Sauté until the onion softens.
- Add the blended tomato paste (with garlic, ginger, and chili) and all the dry spices (salt, cumin-coriander powder, turmeric powder). Cook for 3-4 minutes, stirring occasionally, until the mixture is fragrant and the oil starts to separate.
- Stir in the boiled chickpeas and chopped fresh dill. Cook for another 2-3 minutes to allow the flavors to meld.
- Garnish with extra fresh dill and serve hot.
