Feeling low or need something light yet flavorful? This warm roasted mushroom salad is my go-to fix — it’s bold, tangy, and comes together so easily.
Instructions
- Air fry diced mushrooms with a drizzle of olive oil and a pinch of salt at 180°C for 10 minutes.
- Sauté the large tomato until softened. Once sautéed, blend it with garlic cloves, green chili, ginger, and black salt until a smooth paste is formed.
- In a mixing bowl, combine the roasted mushrooms, thinly sliced red onions, and cubed boiled potatoes. Add the prepared tomato blend.
- Add fresh coriander and a squeeze of lemon juice to the salad. Mix everything well and serve warm.
