Healthy and flavorful Sweet Potato Falafel-Style Bites — cooked two ways: in the pan and in the air fryer! These cutlets are a delicious fusion twist made with grated sweet potatoes, cornmeal, dill, and onions — crisp on the outside, soft on the inside, and served with a refreshing yogurt cucumber dip.

Instructions

  1. Peel and grate sweet potatoes.
  2. Heat a little oil in a pan. Shallow fry 5 patties, flipping 3 times until golden and crispy.
  3. Place 6 patties in an air fryer. Cook at 200°C (392°F) for 10 minutes.
  4. Serve warm with a cucumber-yogurt dip.
  5. Boil sweet potatoes for 5 minutes in water with a few drops of oil.
  6. Strain well and mash with a fork.
  7. Add mashed sweet potatoes to a mixing bowl. Add chopped dill, chopped onions (optional), and all spices.
  8. Mix in cornmeal and cornflour. Use hands to combine well into a dough-like mixture.
  9. Shape the mixture into small patties (makes around 11).
