Crispy on the outside, fluffy on the inside—these air-fried potatoes are taken to the next level with gooey cheese, protein-packed paneer (or tofu), and a pop of fresh tomatoes. A quick 15-minute snack or side dish that can be made vegetarian or 100% vegan!

Instructions

  1. Dice the large and medium potatoes into bite-sized pieces.
  2. In a bowl, toss the diced potatoes with olive oil, chili powder, garlic powder, onion powder, Italian seasoning, and black salt (or regular salt) to taste, ensuring they are evenly coated.
  3. Preheat your air fryer to the recommended temperature (usually around 375-400°F or 190-200°C). Place the seasoned potatoes in a single layer in the air fryer basket.
  4. Air fry for 8-10 minutes, shaking the basket halfway through, until the potatoes are crispy on the outside and tender on the inside.
  5. Open the air fryer and sprinkle the diced paneer (or tofu), chopped tomato, and your choice of cheese (or vegan cheese) over the potatoes. Close the air fryer.
  6. Continue to air fry for another 2-3 minutes, or until the cheese is melted and bubbly.
  7. Transfer the cheesy potatoes to a serving dish and garnish with fresh dill.
