Wholesome, easy, and super tasty! These quinoa oats pancakes are naturally sweetened, full of fiber, and made with just 3 simple ingredients. Perfect for a quick healthy breakfast or snack!
Instructions
- Combine the 1 cup of soaked quinoa, Β½ cup of oats, and 1 tsp of cinnamon powder in a blender. Add a small amount of water (start with ΒΌ cup and add more if needed) and blend until a smooth batter is formed.
- Heat a lightly buttered pan over medium heat. Pour small portions of the batter onto the pan to form mini pancakes. Cook each pancake, flipping 3 times, until golden brown and cooked through, ensuring extra crunch.
- Serve the approximately 15 mini pancakes warm with desired toppings such as honey, sliced banana, and blueberries.
