Make these protein-packed, crispy Cauliflower Chickpea Falafels with a refreshing twist – a smooth grape chutney! Perfect for snacks, wraps, or lunch boxes, this fusion recipe combines traditional falafel flavors with healthy ingredients and zero deep frying. You’ll get two ways to cook them – air fryer and pan-fried – plus a delicious grape chutney you’ll want to pair with everything! Made with cauliflower, chickpeas, fresh dill, and pantry staples, these falafels are crisp outside and soft inside.
Instructions
- Blanch and drain the cauliflower.
- Preheat your air fryer to 180°C (350°F).
- Heat minimal oil in a pan over medium heat.
- Blend 500g grapes until smooth.
- In a large bowl, combine the blanched cauliflower, boiled chickpeas, fresh dill, chickpea flour, rice flour, corn flour, salt, cumin coriander powder, and turmeric powder.
- Place 11 falafel pieces in the air fryer basket and air fry for 10 minutes, or until golden and crispy.
- Pan-fry the remaining falafel pieces, flipping midway, until they are golden brown and cooked through.
- Pour the blended grapes into a saucepan and cook for 20 minutes over medium heat, stirring occasionally.
- Add ¼ cup of water to the mixture to form a paste with the flours and mix thoroughly until a cohesive dough forms.
- Stir in ½ tsp corn starch, black salt, and pepper to taste. Continue cooking until the chutney thickens to your desired consistency.
- Shape the falafel mixture into 4 falafel balls and 17 patties.
