10-Min Veggie Stir-Fry Rice with Mushrooms & Coriander

A quick and easy vegetarian stir-fry rice recipe using leftover rice, mushrooms, and fresh coriander. Perfect for a light lunch or dinner, ready in under 10 minutes.
Instructions
- Heat 1 tbsp olive oil in a wide pan over medium heat.
- Add cumin seeds and let them crackle for a few seconds.
- Add the cooked rice to the pan.
- Sauté for 2 minutes, just enough to warm it through and add flavor.
- Remove rice and set aside.
- In the same pan, add the remaining 1 tbsp olive oil.
- Add mushrooms and sauté for a minute.
- Add green chilies, yellow & orange peppers, and chopped tomatoes.
- Sprinkle in a pinch of salt and ¼ tsp turmeric powder.
- Cook for about 2–3 minutes, until the veggies soften slightly but stay bright and fresh.
- Add the chopped spring onions and lots of fresh coriander. Stir everything well.
- Return the sautéed rice to the pan.
- Mix gently but thoroughly so the flavors combine well.
- Finish with a squeeze of fresh lime juice.
- Serve warm!
