Bindu’s Cheesy Quinoa Stuffed Peppers with fresh dill (Air Fryer Version)

A quick and easy air fryer recipe for cheesy quinoa stuffed bell peppers with fresh dill. This vegetarian dish is perfect for a healthy and delicious dinner.
Instructions
- Rinse quinoa under running water.
- While quinoa is cooking, finely chop the onion, tomato, and dill.
- In a large bowl, combine the cooked quinoa, onion, tomato, and dill.
- Fill the hollow bell peppers with the cheesy quinoa mixture.
- Preheat the air fryer to 320°F (about 160°C).
- In a saucepan, combine quinoa, water/broth, oil and salt. Bring to a boil. Lower heat to low, cover, and simmer until the water is absorbed.
- Cut off the tops of the bell peppers and remove the seeds and inner membranes.
- Add half of the shredded cheese into the quinoa mixture.
- Sprinkle the remaining shredded cheese generously on top of each stuffed pepper.
- Place the stuffed peppers carefully inside the air fryer basket.
- Turn off the heat and fluff with a fork. Let it cool slightly.
- Add black pepper to taste.
- Air fry until the cheese on top is melted and slightly golden.
- Add your favorite sauce as per taste.
- (Optional) Drizzle a little olive oil and squeeze lemon juice.
- Mix everything together gently.
💡 Chef’s Notes
You can add your favorite sauce to the quinoa filling for extra flavor. A drizzle of olive oil and a squeeze of fresh lemon juice are optional additions to the filling.
