A quick and easy air fryer recipe for cheesy quinoa stuffed bell peppers with fresh dill. This vegetarian dish is perfect for a healthy and delicious dinner.

Instructions

  1. Rinse quinoa under running water.
  2. While quinoa is cooking, finely chop the onion, tomato, and dill.
  3. In a large bowl, combine the cooked quinoa, onion, tomato, and dill.
  4. Fill the hollow bell peppers with the cheesy quinoa mixture.
  5. Preheat the air fryer to 320°F (about 160°C).
  6. In a saucepan, combine quinoa, water/broth, oil and salt. Bring to a boil. Lower heat to low, cover, and simmer until the water is absorbed.
  7. Cut off the tops of the bell peppers and remove the seeds and inner membranes.
  8. Add half of the shredded cheese into the quinoa mixture.
  9. Sprinkle the remaining shredded cheese generously on top of each stuffed pepper.
  10. Place the stuffed peppers carefully inside the air fryer basket.
  11. Turn off the heat and fluff with a fork. Let it cool slightly.
  12. Add black pepper to taste.
  13. Air fry until the cheese on top is melted and slightly golden.
  14. Add your favorite sauce as per taste.
  15. (Optional) Drizzle a little olive oil and squeeze lemon juice.
  16. Mix everything together gently.

💡 Chef’s Notes

You can add your favorite sauce to the quinoa filling for extra flavor. A drizzle of olive oil and a squeeze of fresh lemon juice are optional additions to the filling.
