A healthier version of the classic malai kofta — made with paneer, walnuts, and a gently spiced gravy, all cooked in the air fryer instead of deep frying. The spices are minimal to highlight the creamy texture of paneer and the nutty richness of walnuts. This dish is rich in protein, light on oil, and full of flavor.

Instructions

  1. Mix all kofta ingredients (paneer, potato, walnuts, turmeric, cumin coriander, red chili, garlic, onion powders, salt, olive oil, cornflour) in a bowl using a spoon, then knead gently with your hand.
  2. Shape the mixture into 16 small balls.
  3. Air fry the koftas at 180°C (350°F) until golden brown.
  4. Heat oil in a pan, crackle cumin seeds. Add onion and sauté till translucent.
  5. Add chili (if using), garlic, and ginger — sauté for a minute.
  6. Add tomatoes, walnuts, spices (turmeric, cumin coriander, salt), and water. Simmer.
  7. Cool the gravy mixture slightly and blend to a smooth paste.
  8. Return the blended paste to the pan and simmer. Add more water or cream if desired for consistency.
  9. Pour the warm gravy into a serving bowl.
  10. Add kofta balls on top of the gravy.
  11. Garnish with fresh coriander and a drizzle of cream or yogurt (optional).
