We’re making 50 artisanal momos using a unique Whole Wheat & AP Flour blend for a healthier wrapper that stays perfectly soft. Filled with a savory mix of Tofu, Paneer, and 250g of Umami-rich Mushrooms, these are as nutritious as they are delicious.

Instructions

  1. Knead for 7–8 minutes until smooth. Let it rest (this is crucial for rolling!).
  2. While the dough rests, chop your veggies, I used chopper.
    Mix the filling and "bloom" your spices with hot olive oil.
  3. Sauté tomatoes and Timur. Let it cool while you wrap, then blend with roasted peanuts and sesame .
  4. Roll wrappers to 3–3.5 inches and 1mm thickness. Keep edges thin and centers thick!
  5. Use the "Leaf Fold"—pinch the corner, fold inward, and repeat for that elegant sea shell look.
  6. Steam 30 momos for a family dinner (approx. 8–10 mins). Once steam starts to release heavily from sides and momos look shiny they are ready.
  7. Place the remaining 20 on a tray. Flash freeze for 1 hour before bagging to prevent sticking and tearing!
