Using a unique “no-smell” egg technique, this easy fried rice is perfect for families and picky eaters who want healthy comfort food without the greasy takeout feel.

In this video, I share my professional kitchen hack for how to separate cold rice so it’s never clumpy or mushy. This one-pan recipe is packed with fresh flavor from cilantro, lime, and a zesty 4-ingredient sauce.

Instructions

  1. If your leftover rice has formed chunks, lightly sprinkle a little water over it and gently separate the grains with your fingers. Do not mash the rice—simply loosen it. This ensures each grain stays fluffy and non-sticky.
  2. Add 1 tbsp olive oil to a hot pan. Add the loosened rice
    And a tiny sprinkle of water to help it separate further if the rice is too packed.
  3. Crack 3 eggs directly over the rice. Spread them evenly and leave it undisturbed for 2–3 minutes. This eliminates any raw egg smell and creates a silky coating.
  4. While the eggs set, mix the soy sauce, sriracha, ketchup, sesame seeds, and water .
    Add chopped jalapeños on top of rice for flavor
  5. Pour the mixture over the rice and mix everything thoroughly until grains are separated and coated.
  6. Top with lots of chopped cilantro and a squeeze of lime juice.

💡 Chef’s Notes

By letting the eggs sit for a few minutes before mixing, they cook through and bind to the rice. This removes the “eggy” aroma and texture, making it a great way to sneak protein into a meal for kids or picky eaters!
