A quick and easy vegetarian stir-fry rice recipe using leftover rice, mushrooms, and fresh coriander. Perfect for a light lunch or dinner, ready in under 10 minutes.

Instructions

  1. Heat 1 tbsp olive oil in a wide pan over medium heat.
  2. Add cumin seeds and let them crackle for a few seconds.
  3. Add the cooked rice to the pan.
  4. Sauté for 2 minutes, just enough to warm it through and add flavor.
  5. Remove rice and set aside.
  6. In the same pan, add the remaining 1 tbsp olive oil.
  7. Add mushrooms and sauté for a minute.
  8. Add green chilies, yellow & orange peppers, and chopped tomatoes.
  9. Sprinkle in a pinch of salt and ¼ tsp turmeric powder.
  10. Cook for about 2–3 minutes, until the veggies soften slightly but stay bright and fresh.
  11. Add the chopped spring onions and lots of fresh coriander. Stir everything well.
  12. Return the sautéed rice to the pan.
  13. Mix gently but thoroughly so the flavors combine well.
  14. Finish with a squeeze of fresh lime juice.
  15. Serve warm!
