3 Ingredient Creamy Corn Soup Without Cream

This Creamy Corn Soup is naturally thick and comforting, made with cashews instead of cream.
Instructions
- Heat olive oil in a cast iron pan.
- Add chopped garlic and sauté for about 1 minute until fragrant.
- Add rinsed sweet corn and sauté for 2–3 minutes.
- Remove about ⅔ of the corn and blend it with cashews and ½ cup water until smooth.
- Add the blended mixture back to the pan with the remaining corn.
- Cook for 2 minutes, then add water or broth as needed.
- Bring to a gentle boil.
- Finish with fresh lemon juice and garnish with basil.
- Serve warm and enjoy.
