This almond flour biscotti recipe is an amazing experiment, resulting in firm, crisp biscotti perfect for dipping in tea or coffee. It requires no regular flour, no eggs, no baking soda, and no complicated steps. Just simple ingredients mixed, baked, and done. Optionally, finish them with a half dip in dark chocolate for a little extra indulgence.
Instructions
- Add all ingredients (almond flour, golden flax seeds, peanut butter, maple syrup, dried cranberries) to a bowl and mix well until combined.
- Shape the mixture into a log and freeze for 30 minutes.
- Slice the frozen log into biscotti pieces and place them on a tray lined with silicone paper.
- Bake at 350°F (180°C) for 10–12 minutes.
- Cool completely to allow them to firm up.
- Optional: Half-dip the cooled biscotti in melted dark chocolate and let it set.
