Today I made a Japanese-style omelette roll in a rectangular pan, and it turned out soft, cheesy and delicious. This quick rolled egg recipe is simple, satisfying, and perfect for breakfast.

The rolling technique is inspired by Tamagoyaki, but I added my own twist with cilantro, jalapeño, and mozzarella cheese for a slightly spicy and cheesy flavor.

Instructions

  1. Whisk eggs with cilantro and jalapeño.
  2. Heat olive oil in the pan.
  3. Pour half of the egg mixture.
  4. Sprinkle mozzarella and black pepper.
  5. When the cheese melts, fold and roll the omelette.
  6. Slide the roll to the side and add the remaining egg mixture.
  7. Roll again until the omelette is fully cooked.
  8. Slice and enjoy this soft, cheesy egg roll.
