Instructions
- Prep the ingredients
Wash and finely chop the spinach. Crack the eggs into a bowl and whisk until smooth. - Sauté the spinach
Heat a rectangular omelette pan (tamagoyaki pan) on medium heat. Add butter and let it melt. Add chopped spinach and sauté for 2–3 minutes until it softens and releases moisture. - First egg layer
Pour half of the whisked eggs over the spinach. Spread evenly. Sprinkle black pepper and add a layer of cheese. - Roll the omelette
Once the egg starts to set (about 1–2 minutes), gently roll it from one side to the other. Move the roll to one side of the pan. - Second layer
Pour the remaining egg mixture into the empty side of the pan. Add more cheese on top and let it set slightly. - Final roll
Roll the omelette again over the new layer. Cook for another 1 minute until fully set. - Slice and serve
Remove from pan, then slice into rolls. Serve warm and enjoy.
