Instructions

  1. Soak 1/2 cup of red lentils for 10 minutes.
  2. Heat 1 tbsp olive oil in a pan over medium heat.
  3. Serve warm and enjoy your cozy Zucchini Lentil Soup!
  4. Chop the onion, mince the garlic cloves, and dice the zucchini.
  5. Add the chopped onion and minced garlic to the pan and sautΓ© until fragrant, about 3-5 minutes.
  6. Add the diced zucchini, 1/2 tsp turmeric, salt, and pepper to taste. SautΓ© for a few more minutes.
  7. Stir in the soaked red lentils and 4 cups of vegetable broth.
  8. Bring the soup to a simmer, then reduce heat and cook until the lentils and vegetables are soft, approximately 20-25 minutes.
