Crispy on the outside, soft inside — these Eggplant Fritters are a perfect vegetarian, vegan, and gluten-free snack made with chickpea flour (besan) and a few simple pantry staples! These fritters are golden, flavorful, and naturally protein-rich — great as a tea-time snack, appetizer, or even a light meal. They are 100% Vegetarian & Vegan, Gluten-Free (made with chickpea and rice flour), crunchy, light, and full of flavor, and ready in minutes with simple ingredients.

Instructions

  1. Wash and slice the eggplants thinly.
  2. In a mixing bowl, add chickpea flour, rice flour, salt, turmeric, chili flakes, and cumin-coriander powder.
  3. Add water gradually while whisking until the batter is smooth and lump-free (not too thick, not too runny).
  4. Dip each eggplant slice into the batter, coating both sides evenly.
  5. Shallow-fry or deep-fry the coated eggplant slices until golden brown and crisp on both sides.
  6. Serve hot with mint chutney, ketchup, or your favorite dip.
