Crispy High-Protein Red Lentil Bites (Air Fryer)

These crispy red lentil bites are a high-protein vegetarian meal that is both nourishing and satisfying. Made with humble pantry ingredients and very little oil, they come together beautifully in the air fryer. The recipe is simple, with red lentils cooking quickly and the mixture prepared in the same saucepan. The finished bites turn golden and crispy outside while staying soft and flavorful inside. Paired with a creamy yogurt and flax dip, this becomes a balanced lunch rich in protein and fiber without feeling heavy. These lentil bites are naturally gluten-free, meal-prep friendly, kid-friendly, freezer-friendly, and easy to adapt for a vegan diet by using plant-based yogurt in the dip.
Instructions
- Rinse the red lentils well until the water runs clear. Place them in a bowl with plenty of water and soak for 2-4 hours, or overnight if preparing ahead. Drain and rinse again before cooking.
- Add the soaked lentils to a saucepan with 1½ cups water, turmeric, salt, and a small drizzle of olive oil. Cook over medium heat for about 15-20 minutes, stirring occasionally, until the water is completely absorbed and the lentils are soft and tender. Remove from heat and let the lentils cool for about 15 minutes.
- Once the lentils have cooled, add chickpea flour, garlic powder, onion powder, chili powder, black pepper, oregano, and finely chopped cilantro or parsley directly into the same saucepan. Mix well until everything is evenly combined and the mixture is soft but easy to shape. If the mixture feels too wet, cover the saucepan and refrigerate for 20-30 minutes to firm up.
- Lightly grease your hands with a little olive oil to prevent sticking. Roll the mixture into approximately 18 equal-sized balls. Lightly grease the air fryer tray or basket with avocado oil or olive oil, then arrange the lentil bites in a single layer.
- Air fry the lentil bites at 400°F (200°C) for 14-15 minutes, flipping them halfway through cooking for even browning. No additional oil needs to be sprayed on the bites.
- While the lentil bites are cooking, stir together Greek yogurt, ground flaxseed, minced garlic, light olive oil, Himalayan salt or black salt, freshly ground black pepper, lime juice, and finely chopped fresh cilantro. Let the dip rest for 5 minutes before serving to allow the flax to absorb moisture and create a thicker, creamier texture.

To make the recipe vegan, replace Greek yogurt with an unsweetened plant-based yogurt in the dip. Alternatively, these bites can be baked at 400°F (200°C) for about 30-35 minutes.
