Crispy, flavorful, and completely vegan, these Flourless Lentil & Tofu Bites are made with soaked red lentils, extra-firm tofu, mushrooms, vegetables, flax seeds, and hemp hearts. They are a delicious savory snack or appetizer, offering approximately 5g of plant-based protein and 1.5g of fiber per bite. This recipe is flourless, high in plant-based protein, a good source of fiber, and contains magnesium. Cooked in a multi-cavity appe/paniyaram-style pan or pan-fried, they are crispy and satisfying. Serve them warm with your favorite chutney or dip.

Instructions

  1. Soak the dry red lentils, then rinse and drain them well. Blend the soaked lentils without adding any water until they form a thick mixture.
  2. Add the blended lentils to a large bowl. Add the shredded tofu, shredded mushrooms, green pepper, tomato, ground flax seeds, hemp hearts, all the spices, and 2 tbsp olive oil. Mix everything together by hand until well combined; no water or heavy kneading is needed.
  3. Use an ice cream scoop to portion the mixture, or shape it into balls with your hands. This recipe makes approximately 26 bites.
  4. Lightly drizzle oil into an appe/paniyaram-style pan and place the bites into the cavities. Cover and cook over medium heat for about 12–15 minutes, turning them once or twice. Drizzle a little more oil after flipping if needed. Continue cooking until the bites are golden brown and cooked through. For an extra-crispy finish, increase to medium-high heat for about 1 minute at the end.
  5. Serve warm with your favorite chutney or dip, such as homemade tomato pickle, mint or cilantro chutney, tomato salsa, hummus, or avocado dip. They can also be served with a fresh salad for a more substantial meal.

💡 Chef’s Notes

Soaking time for lentils is not included in the prep or total time. These bites can be cooked in a multi-cavity appe/paniyaram-style pan or pan-fried in a lightly oiled skillet. For best results, drain soaked lentils very well, do not add water when blending, finely chop/grate the vegetables, and don’t overwork the mixture. Cook over medium heat first so the inside cooks properly, then finish with a short burst of medium-high heat for extra crispiness. Allow the bites to cool completely before storing in an airtight container in the refrigerator for up to 3–4 days. For the best texture, reheat them in a skillet, toaster oven, or air fryer until warmed through and crispy again.
