Crispy smashed broccoli and potato bake is an easy oven recipe made with simple ingredients. Mini potatoes and lightly steamed broccoli are smashed, brushed with garlic chili olive oil, topped with parmesan, and baked until golden and crispy.
Instructions
- Wash and prep all vegetables.
- Boil the potatoes until just tender. Lightly steam the broccoli; do not overcook.
- While the vegetables are blanching, mix olive oil, garlic, chili powder, and fresh rosemary.
- Brush a baking tray with olive oil and sprinkle parmesan.
- Arrange the vegetables on the tray and gently smash the potatoes and broccoli.
- Brush with the garlic chili olive oil and sprinkle more parmesan.
- Bake at 350Β°F (180Β°C) for 10 minutes, or until golden and crispy.
- Serve hot.
