You’ve seen eggs in omelets, wraps, and sandwiches… but never like this! This crispy triangle tortilla hack is stuffed with eggs, cheese, avocado, and a drizzle of ketchup — a quick 10-min breakfast or snack that’s next-level delicious.
Instructions
- Whisk eggs, chopped onion, chopped tomato, cilantro, salt, and pepper together in a bowl.
- Heat olive oil or butter in a pan. Pour the egg mixture and cook for 1 minute. Then, place the whole wheat tortilla on top of the cooking egg mixture. Flip the tortilla and egg.
- Add the cheese slice, sliced avocado, and tomato ketchup in one quarter of the tortilla.
- Fold the tortilla into a crispy triangle wrap, starting from the quarter with fillings, folding it over the next quarter, then over the third, and finally over the fourth to form a triangle.
- Toast both sides of the folded wrap until golden brown and crispy.
