I’ve never seen or made plantains like this before — and I tried it for the first time, and it was a hit! This crispy plantain flatbread is completely vegan, gluten-free, and naturally rich in plant protein, fiber, and healthy fats. Grated green plantains are mixed with simple pantry ingredients, cooked like a flatbread, and finished on high heat for that perfect crunch. No fancy equipment, no fermentation — just simple, wholesome cooking. Perfect as a breakfast flatbread, snack, or side dish.

Instructions

  1. Peel and grate the green plantains.
  2. Add chickpea flour, rice flour, ground flaxseed, salt, garlic powder, onion powder, and chili flakes to the grated plantains.
  3. Add water slowly and mix well to form a thick, smooth dough — not a flowy batter.
  4. Heat 1 tbsp olive oil in a pan on medium-low heat.
  5. Add a portion of the mixture to the pan and shape it into a round flatbread using a spoon or hands.
  6. Sprinkle black sesame seeds on top (optional).
  7. Cook for 3-4 minutes per side on medium-low heat. Flip twice if needed.
  8. Finish with 1 minute on high heat for extra crispiness.
  9. Remove the flatbread and enjoy. Repeat for remaining dough.
