This bowl is warm, nourishing and perfect when you want something quick, healthy and comforting. Made with red lentils, fresh spinach, garlic and simple spices — this soup comes together in under 20 minutes.

Instructions

  1. Heat olive oil and butter in a pot. Add minced garlic and sauté until fragrant.
  2. Add chili flakes, then add the rinsed lentils. Sauté for 1–2 minutes.
  3. Add chopped tomato, salt, turmeric, and cumin–coriander powder. Mix well.
  4. Pour in 1 cup of water. Cover and cook for 12–15 minutes, or until lentils are tender.
  5. Slightly mash the lentils with a spoon or potato masher for a creamy texture with some chunks remaining.
  6. Add the chopped spinach and cook for 2 minutes, until wilted.
  7. Adjust water if needed to reach your desired soup consistency.
  8. Serve warm.
