Flax Plantain Flatbread

This Flax Plantain Flatbread is crispy, satisfying, and made with simple plant-based ingredients. Grated green plantains are combined with ground flaxseed, chickpea flour, and spices to create a naturally vegan, gluten-free flatbread that cooks beautifully in a pan. Finished with a short burst of high heat, this flatbread develops an irresistible crunch while staying wholesome and nourishing.
Instructions
- Peel and grate the green plantains.
- Add flaxseed, chickpea flour, rice flour, salt, garlic powder, onion powder, and chili flakes to the grated plantains.
- Add water slowly and mix to form a thick, smooth batter — ensure it's not runny.
- Heat 1 tbsp olive oil in a pan on medium–low heat.
- Add batter to the pan and shape into a round flatbread using a spoon or your hands.
- Sprinkle black sesame seeds on top (optional).
- Cook for 3–4 minutes per side on medium–low heat.
- Flip once or twice if needed during cooking.
- Finish with 1 minute on high heat for extra crispiness.
- Serve hot and enjoy.
