These Flourless High-Protein Moong Bean Flatbreads are gluten-free, vegan, and have the perfect “crunch” thanks to the secret ingredient: Golden Flax. This batch makes 6 large, flexible wraps—perfect for healthy meal prep or weight loss!
Instructions
- Rinse the dry yellow moong beans thoroughly and then soak them in water for at least 4 hours, or until they are soft. Ensure you do not use the soaking water for blending.
- Combine the soaked moong beans, golden flax seeds, 1/2 cup of water, salt, garlic powder, and ginger (all to taste) in a blender.
- Heat a non-stick pan over medium heat.
- Pour a thin layer of the batter onto the hot pan to form a wrap.
- Blend the mixture until it is completely smooth. Adjust the amount of water as needed to achieve a pourable batter consistency.
- Cook for 2-3 minutes per side, until the wrap is golden and cooked through.
- For an extra golden and crispy finish, flip the wrap a second time and gently press down for an additional 30 seconds.
