A quick and easy high-protein breakfast or snack, featuring a savory egg omelet filled with fresh spring onions, parsley, soaked whole moong beans, and melted cheese, all served between slices of bread with cherry tomatoes and a touch of ketchup. Instructions
- Whisk 3 eggs with salt and pepper in a bowl until well combined.
- Heat a pan with 1 tbsp oil over medium heat.
- Pour half of the whisked egg mixture into the hot pan, spreading it evenly to form an omelet base.
- Immediately add chopped spring onions, parsley, and soaked whole moong beans on top of the cooking omelet.
- Place 2 cheese slices on the omelet, then carefully place bread slices on top of the cheese.
- Gently flip the omelet, ensuring the bread is now on the bottom and the omelet side is facing up.
- On one half of the omelet, add cherry tomatoes. On the other half, add a drizzle of tomato ketchup.
- Fold the omelet sandwich in half and serve immediately.
