These High Protein Flourless Red Lentil Seed Crackers are crispy, crunchy, and made with wholesome ingredients. Crafted from red lentils and nutrient-dense seeds, they contain no flour, no eggs, and no preservatives, offering simple ingredients packed with plant-based protein, fiber, and healthy fats. Instructions

  1. Soak red lentils for 4–6 hours or overnight.
  2. Rinse and blend lentils with spices, olive oil, tomato paste, and a little water until smooth.
  3. Add sunflower seeds, hemp hearts, chia seeds and pumpkin seeds to the blended mixture.
  4. Mix everything well and rest for 10–15 minutes so chia absorbs moisture and creates a dough-like texture.
  5. Divide dough into two portions.
  6. Roll each portion thin between parchment sheets.
  7. Fold parchment edges as a guide for even rolling.
  8. Cut into crackers before baking.
  9. Bake at 350°F (175°C) for 25–30 minutes until crispy.

💡 Chef’s Notes

Soaking time for lentils is 4-6 hours or overnight. Homemade crackers can soften depending on humidity. If they soften, air fry at 180°C (350°F) for 1–2 minutes to restore crispness. Always allow crackers to cool completely before storing to prevent moisture loss. Store in an airtight container at room temperature for up to 1 week, in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
